Super Moist and Simple Banana Chocolate Chip Cornbread

So let me tell you how I came up with this unusual, but friggin’ delicious banana chocolate chip cornbread recipe. It was a typical school day. Shortly after my son got off the bus from school he started his normal routine of bugging me about snacks. On any given day, this kid doesn’t even get in the door before he’s talking about food.

So as usual, he was getting on my nerves. “Mommy, can I have a snack?”  The only problem on this day was, we were out of snacks and I wouldn’t be able to make a store run until my hubby came home a few hours later.

So I did what any desperate greedy foodie mama would do.  I went through my cabinets, pulled out some ingredients and started whipping up a quick dessert with what I had to work with.  Jiffy cornbread mix and bananas.

I love Jiffy Corn Muffin Mix. Not only is it a cheap pre-mix for cornbread, but it can be incorporated into a lot of recipes.  I use it for casseroles, desserts and for many years have been using it as the base of my cornbread stuffing recipe.  It’s basically my secret ingredient to some of my best dishes.

I understand that some people don’t like it because the mixture is sweet and it’s not scratch-made cornbread, but I love the convenience.  If I want homemade taste, I find that I can always add whatever I need to my Jiffy mix to suit my needs. To bring the sweetness down for cornbread, all I ever have to do is add in more cornmeal & flour.

What I love about this dessert is that the edges of this bread bake up nice and crisp. The crust stays smooth and the inside comes out really moist and dense.  It’s sweet with just the right amount of gooey warm chocolate to satisfy a fix.  You can refrigerate it and eat it cold, but it’s best served warm with whipped cream or topped off with ice cream.

This recipe is super easy to make.  Like I said, it all starts out with a simple box of $ .50 Jiffy Cornbread Mix.

Banana Chocolate Chip Cornbread Recipe

Ingredients

  • 1 Box Jiffy Corn Muffin Mix
  • 3 Ripe Bananas
  • 2 Eggs
  • 1/2 cup Chocolate chips
  • 1/4 cup brown sugar
  • 1 tsp Vanilla Extract

 

Directions

  1. Preheat oven to 350 degrees.
  2. Oil/grease baking dish.
  3. Mash bananas in a bowl.  Add eggs, brown sugar and vanilla extract. Whisk. 
  4. In another bowl, add dry Jiffy Corn Muffin Mix. Next, combine ingredients by pouring wet ingredients into dry mix. Stir well.
  5. Fold in chocolate chips.
  6. Pour batter into baking dish. Bake for 40 minutes or until fork inserted in center comes out clean.

  2. Amazing!! And so easy for a quick breakfast treat for the kiddo before school. I made as heart shaped muffins (15 min on convection) and mini muffins (13 min on convection). Time to buy more 🍌!

I never post comments for anything either but just like CC said in the comments I also am under a ” stay at home” quarantine and saw the box of jiffy corn muffin mix and had 2 bananas left so I put those ingredients in google and this popped up. I used crushed up hershey’s kisses for the chocolate ( all i had) but it turned out great! Thanks for the recipe!

I’m one of the many people who found themselves in self-isolation with limited ingredients, staring for days at boxes of leftover Jiffy Corn Muffin Mix from Thanksgiving, trying to figure out something to make. I typed in “bananas, eggs, Jiffy Corn Muffin Mix” into Google, and your recipe came up. When this came out of the oven and I took the first bite, I almost cried. It is SO DELICIOUS!!!
