Bacon Smoked Sausage O’Brien
Quick and easy one pot meal, Bacon Smoked Sausage O’brien. It’s the perfect skillet meal for Breakfast, Brunch or Dinner.

  • 1pkg Polish Sausage (Diced)
  • 1/2 Sweet Onion (Diced)
  • 1/2cup Bacon (Cooked, Chopped)
  • 1bag Frozen Potatoes O’brien
  • 1/2teaspoon Crushed Garlic
  • 3Tbsp. Oil
  • Garlic Salt
  • Pepper
  1. Heat skillet or wok, over medium/high heat. While pan is heating, dice onions and smoked sausage.
  2. Add smoked sausage and onions to the pan and stir to prevent sticking. Onions will cook in the fat of the sausage.
  3. Add Garlic and Stir. Add 1 or 2 cubes depending on your taste.
  4. Add 2 Tbsp of cooking oil to pan.
  5. Pour in frozen Potatoes O’Brien.
  6. Add bacon and stir. Allow potatoes to sweat. If you like your potatoes crispy, cook them much like you would hashbrowns. Let them cook/fry for periods at a time (don’t stir them). Periodically flip portions over with a spatula, to crisp on the other side, until the texture is how you like.
  7. Season to taste with Garlic Salt and Pepper, giving one last flip/mix before you serve, to distribute your seasoning well.
Recipe Notes

The cool thing about using frozen vs. fresh in this recipe is #1 it saves time. #2 your peppers and extra onions are already included in the package.

If you don’t have fresh crushed garlic or jarred, you can substitute with frozen crushed garlic cubes.

You can use pre-cooked bacon or bacon bits

Sometimes I toss on my lid to soften the potatoes a bit, but be sure not to leave the lid on for more than a few minutes so your potatoes won’t turn soggy.
