I’ve been making these loaded cheesy nachos for the fam and they’ve become such a big hit that they now want to eat them every week!  Makes my meal planning easy and they can be done in less than 30 minutes. Fine by me lol.

Taco Tuesday Is Now Loaded Nachos Night

This is my twist on Taco Tuesday.  So, move over tacos! Not that I ever bought into the whole taco Tuesday thing in our house anyway. Shoot, the way I’ve been feeling lately with all the stresses of virtual school, we’ve had a lot of “fend for yourself Fridays” and “cereal Wednesdays” lol. 

And I have NO shame about it either.

But the one night I decided to make a quick batch of nachos everybody went crazy over them. Even my pickiest eater was trying veggies that she normally snubs her nose at. 

I find that the best way to hide things that are good for you is under a coat of cheese. Seriously, if I slap some cheese on it, they eat it. Go figure!

Let me show you how to make loaded nachos. 

Loaded Cheesy Nachos Recipe

Ingredients

Meat/Bean topping

  • Tortilla Chips – Restaurant Style
  • 1/2 diced sweet onion
  • 1/2 teaspoon crushed garlic
  • 1 lb ground beef
  • 1 tablespoon vegetable oil
  • 2 teaspoons taco seasoning mix
  • Can of refried beans
  • dash of paprika
  • black pepper
  • 1 teaspoon brown sugar

Cheese Sauce

  • Old El Paso, squeezable mild queso

Toppings

  • 2 cups shredded lettuce
  • 1 diced Roma tomato
  • 2 diced spring onion stalks

Directions

1.  Preheat oven to 400 degrees.

2.  On the stovetop, place oil into a frying pan over medium-high heat. Once heated, add your diced onions and garlic. Stir until onions start to turn clear and garlic browns just a bit.  

3. Add your ground beef to the frying pan and brown.  Make sure to break up the beef as it browns or you can simply break it up as you add it to the pan. 

 4. Once the meat has been fully browned, drain some of the oil if necessary.  Then add your refried beans. Mix the beans and meat as it cooks.  The beans should become softer as they heat.

5.  Lower the heat to medium. Add in all of your seasonings and continue gently stirring your meat/bean mixture until the beans begin to brown a bit and stick to the pan.  Turn off the heat and set aside. 

6.  Grab your baking dish and layer the bottom with a light layer of tortilla chips. Sprinkle that layer with finely shredded cheese and diced processed cheese. 

7.  Add another thicker layer of tortilla chips to the pan. This time make sure to also concentrate on the sides and corners of the pan. Cover these areas with a few vertical chips, sort of like you’re creating the edges of a crust.

8.  Bake for about 8 minutes!  It’s ready to come out of the oven when the cheese looks totally melted and gooey.

9. The last step is to add your cold toppings to your nachos and finish it off with a decorative squeeze of queso or your favorite cheese sauce!
