It doesn’t look like it’s gonna calm down any time soon either. “All ideas, recipes, & opinions are entirely my own however, this is a sponsored post on behalf of Michael Angelo’s™.” My editorial calendar is full through mid-November. WooHoo!! I’ve been plugging away at my holiday guide so I can get it published on November 1st. I have 2 speaking engagements next week and I’ll be participating in a Twitter party to gear up for the DreamFest virtual conference. I’ll be attending the conference next month and giving tickets away for others to enjoy it with me so stay connected for that. That’s not even all of it! On top of all of that, my son was out of school on fall break for 10 days. So that meant 10 days of trying to keep an 8 year old and 1 year old entertained and busy. Then we had doctor’s appointments with the kids and hubby has been working from home sporadically due to internet outages at work. It really has been a whirlwind for us. So much so, that I really haven’t had much time to cook lately. Fortunately, me not cooking hasn’t negatively affected my household. I mean they haven’t started throwing dishes and forks at me yet, so I must be doing something right. I knew I wouldn’t be able to throw down in the kitchen like I’m used to, this month, but I really wanted to make sure that our weekly meals remained simple and filling, without all of the hard work. So, with perfect timing, I was asked by Michael Angelo’s™ to try some of their Signature Line meals to share my experience on how they can come to the rescue of a busy lifestyle. Michael Angelo’s Italian meals found in the frozen aisle at Walmart I Know Good Italian Thank goodness for these deeeelicious Michael Angelo’s Italian meals. They really did save my life this month. Besides some of my regular go-to quick meals, I was able to whip together some pretty tasty Italian nights with these meals. It’s been a while since I’ve chowed down on some good Eggplant Parmesan, and it is GOOD! I grew up on authentic Italian food, so I know good Italian when I taste it. Michael Angelo’s came through with the deliciousness! This is the eggplant parmesan I love the fresh ingredients and nothing on the label that I can’t pronounce or explain. Just simple and friggin’ delicious. Michael Angelo’s Lasagna ingredients I paired the lasagna with a nice crusty bread and a little olive oil with parmesan & pepper. Since living in the south, it’s been hard finding good Italian food, so sometimes you gotta do what you gotta do. But this tastes nothing like any other Italian meals from the frozen aisle. The sauce is really flavorful and fresh. You can actually feel and taste the meat and the variety of cheeses. Oh and the ricotta on the lasagna…Yum!!
