Carmelized Butternut Squash with Rosemary | Naturally Stellar

Makes an excellent side dish to Fish, Pork or Beef.

I want to share an easy & very tasty recipe that I’m sure you’re going to want to make over and over again.  Mine is an adaption from the Barefoot Contessa’s. It’s really simple, quick and makes a great side dish to your favorite entrée.  The squash comes out moist, sweet & very flavorful. It pairs really well with Fish, Pork or Beef.

15 Mins.


  • 1 1/2 to 2 pounds. Diced Butternut Squash (I bought mine prepackaged/fresh from Dole in Fresh Produce Section)
  • 1/4 cup Dark Brown Sugar
  • 2 Tbsp. Butter
  • 4 Tbsp. Water
  • 1/2 tsp. Rosemary (I used McCormick’s dried Rosemary)
  • Salt & Pepper to taste

Easy Stove Top Directions:

Place Frying Pan on Med/High heat.  Add Butter to pan and allow butter to completely melt & coat the bottom of the pan.  Slowly begin adding your Squash (Be careful not to splash).  With a large spoon stir the squash & coat all sides in butter.  Next, add your Rosemary, Salt & Pepper.  Stir gently.  Sprinkle Brown Sugar over the Squash. Add your water and bring to simmer.  Then reduce heat to Medium, Cover and allow to steam/simmer. Let it simmer for 10 – 15 minutes, taking care to gently stir and coat squash every few mins. Brown Sugar/Water mixture will begin to thicken as it simmers.  If needed, add just a little water by the Tablespoon to keep mixture from evaporating. It is done when squash is semi-mushy and fork easily penetrates.
