Fresh Baked Strawberry & Cream Cheese Bread
So last night I was feening for some dessert and couldn’t figure out what to make. No way I could watch Nashville without something sweet to accompany the drama. I was down to a package of cream cheese and some frozen strawberries in my freezer.  I thought about making some dessert bars, but quickly realized I was all out of butter.  Crap!

So, after sending my hubby & son to the store to get some butter, I quickly got on Pinterest and started searching.  I typed in Strawberries & Cream Cheese in the search bar to see which desserts would pop up.  I came across a recipe for this delicious bread and was directed to an awesome baking blog called Bake or Break.

When I find recipes, I can usually tell right away by the ingredients or instructions if the dish will turn out ok.   I’m so glad I found this blog, because there are a lot of great recipes on there.  Shouts out to Bake or Break for sharing this awesome bread!

As with most recipes, I make changes where I see fit or double-up/halve if I want to make more or less of something.  In this case I doubled up the recipe to make 2 loaves and made just a few tweaks for my personal taste.

I’m going to give you all of the ingredients, but include (highlight) where I made changes so you can make it as you please.  If you want 2 loaves just follow the bolded ingredients.  This bread is Soooooo Gooooood!     I thought I was in love with Target’s Market Pantry Blueberry Streusel Bread, but This Right Here (in my Tamar Braxton voice)…Woooo!!   Can you tell I love to eat?

Anyway, let’s get to it.

Strawberry Cream Cheese Bread

Prep Time: 15 minutes

Cook Time: 40 minutes

Yield: one 9″x 5″ loaf (10-12 servings)

Strawberry Cream Cheese Bread

  • 1 cup all-purpose flour  2 cups
  • 1 cup rolled oats  2 and 1/2 cups
  • 1 & 1/2 teaspoons baking powder  3 teaspoons
  • 1/2 teaspoon salt  1 teaspoon
  • 1/2 cup unsalted butter, softened 2 sticks=1 cup
  • 1/2 cup packed light brown sugar 1 cup. I used Dark Brown Sugar instead
  • 2 large eggs  4 eggs
  • 2 teaspoon vanilla extract, divided  2 and 1/2 teaspoons
  • 6 ounces strawberries, chopped  12 oz. Frozen Strawberries, thawed & chopped
  • 4 ounces cream cheese, softened 1 8oz. package
  • 1/4 cup granulated sugar  1/2 cup


Preheat oven to 350°. Grease a standard 9″x 5″ loaf pan.

Whisk together flour, oats, baking powder, and salt. Set aside.

Recipe. Dry ingredients. Strawberries n Cream Cheese Bread

Beat butter and brown sugar until fluffy. Add eggs and 1 teaspoon ( 1 and 1/2 if you’re doubling) vanilla and mix well. Gradually mix in flour mixture. Stir in strawberries.

In a separate bowl, beat cream cheese, sugar, and 1 teaspoon vanilla (1 and 1/2 if you’re doubling) until smooth. Add to bread mixture, stirring 4-5 turns until streaked with cream cheese mixture.

Transfer batter to prepared loaf pan. Bake 35-40 minutes, or until a pick inserted into the center comes out clean. Cool completely in pan on wire rack before serving.
