I come from a family full of inspirational women. Hard working women that have shown me what it means to be strong, independent and confident. They taught me how to persevere through hardships, how to navigate society as a young black woman and how to uplift and empower others.

The Women Who Inspire Me

In the late 1950s, my maternal grandmother became a young widow in her 30’s, after my grandfather died. She was left to raise 7 children on her own. It was an extremely tough and eye-opening experience for her to have to navigate a new way of life while being the sole provider for kids ranging in ages from 3 to 13.   

I can’t even imagine what that must have been like. But my grandmother has always made a point to teach me how to take care of myself and to be confident that I can do whatever I set out to do, with or without the help of a man.  Women are more than able.

Age Isn’t A Factor

My mother taught me that age should never be a factor in pursuing my aspirations. I remember growing up and watching my mom fervently push to become one of the first black women to join a local labor union in my hometown, so she could get hired for construction jobs in our area. It was an uphill battle, but she kept calling & pushing until she finally got in.  Back then, there weren’t many women working in construction or in the unions in Upstate NY. Once she got into the union, she pushed even harder to get hired for jobs and hold onto her position, through all kinds of adversity. But she did it and our family benefitted and flourished from all of her hard work. 

When she made up her mind to go back to college in her 40’s, she didn’t let anything stand in her way. To some, her journey may have seemed effortless, but I still remember all of the late nights and struggle she went through to finish her classes and graduate.  She worked many years after graduation as a chemical dependency counselor until she went back to school to become an RN.  My mother graduated from nursing school with honors and today she is a CNA instructor for the U.S. Department of Labor’s Job Corps program. 

My mom and grandmother inspire me every day to keep pushing & pursuing my dreams no matter what hardships may come my way. They are truly remarkable women who show me so much unconditional love and support.

In honor of the powerful women in my life, I decided to put together a mini women’s empowerment brunch and share this super easy tutorial for my hot beer cheese dip.  Serve this at your next brunch, house party or tailgate!

Hot Beer Cheese Dip

(Multi-Cooker Recipe)

I love beer cheese!  Pretty much any dip that involves cheese is fine by me. This one is a recipe that I adapted from one of my favorite food sites, Bread Booze Bacon.  Because we’re in the south, I decided not to do the traditional pretzels to go along with this recipe. I opted instead, for some warm mini biscuit bites. Mmmm!

I also decided to make this in my multi-cooker.  You can still use this recipe to make it on the stove top if you prefer.

INGREDIENTS

  • 1 teaspoon minced garlic
  • 2 tablespoons of butter (I prefer french butter)
  • 2 1/2 tablespoons flour
  • 1/2 teaspoon dry ground mustard
  • 8 ounces beer (for this recipe I used Yuengling Traditional Lager)
  • 8 ounces cream cheese (softened)
  • 2 cups shredded sharp cheddar cheese
  • 1/4 teaspoon garlic salt with parsley
  • 1/4 teaspoon pepper
  • Crusty bread or mini biscuitsfor dipping

DIRECTIONS

  • Turn on your multi-cooker to medium-high heat.
  • When it’s ready, add butter.
  • To the hot butter, add the garlic. Cook for 1-2 minutes, keep stirring until you can really smell the garlic.
  • In a bowl, mix the flour and dry ground mustard. Add the flour mixture to the multicooker and whisk to combine. Cook your roux for 1 minute.
  • Slowly pour in your beer and whisk gently. The mixture will bubble. Keep stirring. Cook for 2 minutes.
  • Add the cream cheese and cook until totally melted, stir well.
  • Next, add the cheddar cheese. Stir to combine until the cheese is melted and the sauce is thick and smooth, about a few minutes.
  • Season with garlic salt and pepper to taste.
  • Turn the multi-cooker to warm.
  • Transfer to a serving bowl when ready. Serve the dip with some crusty bread or mini biscuits.
