I really like cooking my chicken this way, especially if I’m getting bored with having fried chicken after a while.   You’re basically cooking your chicken in it’s own fat, so there’s no need for additional oil.  With this method, you’ll still get that yummy crispy skin paired with succulent, juicy meat that’s full of flavor.

30 Minutes

Serves 4

  • 4 Large Chicken Thighs
  • Seasoned Salt
  • Onion Powder
  • Garlic Salt
  • Thyme

How To Make These

Heat a large frying pan on medium-high heat.

While the pan is heating. Wash your chicken thighs, taking care not to remove all of the fat.  If there are large pieces of fat hanging, by all means toss that, but do not pull all of the fat from your chicken thighs.  Next, season your chicken thighs on both sides with Seasoned Salt, Onion Powder and Garlic Salt.   Now, sprinkle a little thyme on the skin sides of each piece.

You want your pan to be hot enough that it will immediately sear your meat, so a little bit of smoke coming off the pan is your friend.

Once your pan is ready, place each chicken thigh skin side down into the pan.  Let these sear for a few minutes to until the skin carmelizes and browns a bit.

After a few minutes, flip each piece over and turn down your heat to Medium.  Let the pieces cook for about 10 minutes, moving them every few minutes to prevent sticking to the pan.

Flip them over again and let them cook an additional 5-10 minutes.  Now you’re gonna do 1 more flip – Meat Side Down.   To finish these off, you’re going to add about 2-3 Tablespoons of water to the middle of your frying pan and let the steam finish cooking your meat.

While your chicken is cooking, you can start your sides.   For this particular meal I made some quick Success brown rice and microwaved some steamed broccoli, that I later added a little garlic butter to.   The brown rice can be seasoned with simple salt and black pepper to taste.
