I just realized that I forgot to share what I did for Valentine’s Day this year. My bad!

Well, since normally either me or the hubby has to work on V-day, most years we just end up celebrating on another day when we’re both available.  We always have a good time, but the moment is never really intimate or overly special in my opinion.  We always end up competing for a table some place.  Barely getting a quiet moment, because the restaurant is too noisy or crowded.   It just seems like something is always off about the evening.  Either the food wasn’t good for one of us or parking sucked; the wait was ridiculous or valet service was horrible.

This year though we decided to try something a little different. Why not celebrate a whole weekend vs. going out for V-day?  It would give us a chance to get in some quality time, a little rest & relaxation, lots of ….you know… Lovin 😉 , and we could catch up on some flicks we’ve been wanting to see.

Since my in-laws were taking my son to Charlotte for the weekend anyway, it worked out perfect for us.  I already scouted my food idea pins on Pinterest earlier that week, so I was all ready to throw down in the kitchen and make him something special.  I stopped by the Fish Market early Friday morning and picked up some Grouper, Lobster & fresh Lump Crab meat for our dinner.

I can’t even remember the last time we had a chance to be alone for a whole weekend without our son & neither of us working.  To say It’s been a while is truly an understatement.

Anyway, we stopped by our local Redbox and picked up a few DVD’s for a movie marathon and readied the living room for a quiet, romantic dinner floor picnic.

Here’s what I made:

Grouper with Lump Crab & Fondue Sauce. Virgin Strawberry Daiquiri. Cheesecake Stuffed Strawberries with Chocolate & Graham Cracker Crust

I’ll be sure to make a recipe post with all this yummy goodness, I promise.

I’m so glad that we decided to stay in and use our home as our own little private getaway.  I had such a fun and relaxing time chilling with my best friend.  As my son would say, it was AWESOME!  It gave us a chance to re-connect, really get in some good US time and made this Valentine’s Day the most special one that I’ve had with him so far.  No cards, flowers, candy or all that EXTRA stuff everyone fawns over each year.  (raises hand) Guilty! Just some real-time with each other, like it’s supposed to be.

Our Wedding Day – April 19, 2002

I always say I may not have the biggest ring or have had the big glamorous wedding that people seem to think matters so much.  We’ve seen friend’s & family member’s relationships and marriages crumble all around us and by the grace of God we’re still standing. I’m not rich. I don’t have the big house, the car or lucrative career. But when it’s all said and done I have a really good marriage, a husband that deeply loves & supports me and we are and will always remain best friends.
